The Fabulous World of Ferments: Okines #6

We’re partnering with Okines Community Garden in Dodges Ferry to bring you a special 6-part series of hands-on permaculture skills. This is workshop #6, The Fabulous World of Ferments. A one-day introduction to some excellent fermenting techniques that you can use at home to make kraut to kimchi, sourdough to sparkling kombucha.

Have you always wanted to ferment seasonal harvest? Bake your own sourdough bread? Brew your own fermented drinks?

Join Nico from Culture Club Tasmania for a day to learn about the art of fermentation and get your hands busy making, learning and taking home delicious treats to spark your own fermentation practice.

Students will receive basic knowledge and hands-on experience in making fermented foods and drinks. The workshop aims to build confidence so people will start fermenting at home.

  • The course will cover:
  • Introduction to fermenting
  • Demystifying the fermentation process
  • Health benefits of including fermented foods into your diet
  • Hands-on making of 7 easy wild fermented foods and drinks:
    • Sauerkraut
    • Kombucha
    • Sourdough bread
    • Pickles
    • Labne cheese
    • Water kefir
    • Country wine


We’ve designed this workshop as an introduction for folks wanting to get started in ferments – if you’re looking for hands-on learning, demonstrations and the recipes and essential supplies (sourdough starter, anyone?) then this is the place to come.


  • Fully catered  – it’s going to be delicious,
  • Some solid time in the Okines’s Community Garden where you’ll see strategies you can apply to your small or large garden,
  • Sourdough Starter
  • A Scoby to start your own kombucha
  • Labne cheese, pickles and sauerkraut
  • Course notes, jam-packed with information to support you to be a gun fermenter!

You’ll need to bring a collection of 5 jars, approx 200-300ml capacity, and ideally one of them with a wide mouth.


Our caterers will spoil you with food to fill your belly, warm your hearts and inspire you to grow your own. And, of course, we can accommodate any dietary requirements.

Nestled in the Southern Beaches community of Dodges Ferry, Okines Community Garden is an inspiring place to learn, share knowledge and contribute directly to the wellbeing of the land and the people it supports. The gardens consist of mature fruit trees, over 30 raised veggie beds, chickens, bees and an outdoor kitchen providing a hub for shared outdoor meals and a workshop space. ‘The Garden’ is connected to Okines Community House – which provides added space for learning and undercover workshop needs.


You’ll be provided with clear directions on how to get there prior to the course.


Nico Leo is a Dutch migrant and co-founder of Culture Club Tasmania, a group of fermentation enthusiasts that experiment fermenting Tasmanian’s delicious seasonal produce at Source Community Co-op. Nico loves good food and is passionate about DIY health care practices that support people to live a good life. She loves sharing her knowledge and skills during hands-on community events.

We have partnered with Okines to present this series of workshops for their region. Thanks to Okines, if you live in the Lower South East coast of Tasmania, you will qualify for a significant subsidy – each course will cost you just $150. We strongly encourage people living within the region to enrol, but these courses are also accessible to anyone that wants to join us! Areas that qualify for a subsidy extend from Sorell, to Swansea and down the coast to the whole peninsular, incorporating Dodges Ferry, Carlton, Primrose Sands and Dunalley.
